This crunchy, flavour packed salad is loaded with green goodness and is a perfect lunch or dinner option as the weather starts to warm up. Takes 20 minutes to make and serves 4.

 

INGREDIENTS

  • 2 Cups brown rice
  • 100g Mixed salad leaves
  • 1 Green capsicum, thinly sliced
  • 1 Cucumber thinly sliced
  • 1 Avocado, chopped into wedges
  • 1 Cup of edamame beans
  • 75g Goats cheese, crumbled
  • 1/3 Cup of pepitas
  • 4 Portions of smoked salmon

DRESSING INGREDIENTS

  • 1/3 Cup fresh basil leaves
  • 1/3 Cup fresh flat-leaf parsley leaves
  • 1/3 Cup chopped fresh chives
  • 1 Garlic clove, halved
  • 2 tsp finely grated lemon rind
  • 2 tbsp lemon juice

METHOD

1. Finely chop basil, parsley, chives, garlic and lemon rind. Add chopped ingredients and lemon juice in a small food processor. Process until well combined. Season with salt and pepper.
2. Place cooked rice, salad leaves, capsicum, cucumber, avocado, edamame, pepitas and goats cheese into a large bowl. Toss to combine.
3. Dish salad out as required and serve with smoked salmon and dressing. Enjoy!!
