This one pan recipe is a colourful, flavour packed dish that will please the whole family. Full of veggies and protein, our Greek inspired, lemon baked chicken recipe is a perfect week night dinner. Serves 4.
INGREDIENTS
- 6-8 chicken breasts
- 2 Zucchini
- 1 large punnet of mixed cherry tomatoes
- 1 red onion
- 1 brown onion
- 2-3 cloves of garlic
- 1-2 Sweet potato (Optional)
- 3-4 Lemons
- 3 tbsp Olive Oil
- 1-2 tsp Oregano
- Handful of fresh Basil
- Salt and pepper
- Feta (Optional)
METHOD
- Pre heat oven to 180 degrees
- Roughly chop all vegetables and place in baking tray/pan
- Add olive oil, lemon juice, oregano and salt and pepper to a bowl. Mix to combine.
- Add chicken breasts to the top of the vegetables and coat in dressing mixture.
- Cook for 30 minutes or until chicken has browned. Turn chicken and cook for another 20 minutes or until chicken is cooked right through.
- Serve with crumbled feta on top (Optional). Enjoy!
