These mouth watering bites are the perfect dessert fix, whilst still being nutritious and packed with protein. Make a batch and store in the freezer. (If they last that long). Serves 12.

 

INGREDIENTS

  • 1 & 1/2 cup Fresh strawberries
  • 1 cup Plain Greek yogurt
  • 2-3 Tbsp Honey (to taste)
  • 1 & 1/2 cup ‘Noshu’ 95% sugar free choc baking chips
  • 1 Tbsp Coconut oil

METHOD

  1. Line a tray with baking paper for preparation.
  2. In a bowl, combine yogurt, roughly diced strawberries and honey.
  3. Using a table-spoon, spoon bite sized mixture onto the baking tray, ensuring they are spaced evenly.
  4. Place the tray in the freezer for 20-30 minutes to allow the yogurt bites to firm up.
  5. Melt chocolate chips in microwave at 30 second increments to ensure the chocolate doesn’t burn. Final texture should be smooth with no chunky bits.
  6. Remove the tray from the freezer and dip each bite into the melted chocolate, ensuring they are fully coated.
  7. Place the coated bites back on the tray and into the freezer for another 20 minutes or until chocolate has completely hardened.
  8. Once the bites have hardened, enjoy!!!
