These mouth watering bites are the perfect dessert fix, whilst still being nutritious and packed with protein. Make a batch and store in the freezer. (If they last that long). Serves 12.
INGREDIENTS
- 1 & 1/2 cup Fresh strawberries
- 1 cup Plain Greek yogurt
- 2-3 Tbsp Honey (to taste)
- 1 & 1/2 cup ‘Noshu’ 95% sugar free choc baking chips
- 1 Tbsp Coconut oil
METHOD
- Line a tray with baking paper for preparation.
- In a bowl, combine yogurt, roughly diced strawberries and honey.
- Using a table-spoon, spoon bite sized mixture onto the baking tray, ensuring they are spaced evenly.
- Place the tray in the freezer for 20-30 minutes to allow the yogurt bites to firm up.
- Melt chocolate chips in microwave at 30 second increments to ensure the chocolate doesn’t burn. Final texture should be smooth with no chunky bits.
- Remove the tray from the freezer and dip each bite into the melted chocolate, ensuring they are fully coated.
- Place the coated bites back on the tray and into the freezer for another 20 minutes or until chocolate has completely hardened.
- Once the bites have hardened, enjoy!!!
