Marinated pesto chicken, served with zucchini zoodles is a hearty high protein dinner. Swapping pasta to zucchini is a perfect way to get your pasta fix without sacrificing the calories. Not to mention this recipe is delicious. Serves 4.

 

INGREDIENTS

  • 450g Chicken breast
  • 150g Cherry tomatoes
  • 3 Tablespoons pesto
  • 1 Garlic clove
  • 1/2 Red onion
  • 2-3 Zucchinis
  • Salt and pepper, to taste
  • Chilli flakes (Optional)

 

METHOD

  1. Spiralise the zucchini. (Pre-spiralised zucchini can be purchased from some stores).
  2. Dice the chicken into 3-4cm pieces.
  3. In a medium sized bowl, combine the chicken, pesto, salt, and pepper. Toss together until the chicken is coated in the pesto. Set aside.
  4. Heat a pan over medium heat and lightly spray with cooking spray. Cook the garlic and red onion until brown.
  5. Cut the cherry tomatoes into halves and add to pan. Cook the skin is slightly blistered.
  6. Add the pesto chicken to the pan and cook until the chicken is cooked through.
  7. Add in the spiralised zucchini.
  8. Toss everything together and heat through for about 2-3 minutes.
  9. Serve with a sprinkle of chilli flakes. Enjoy!!
