Marinated pesto chicken, served with zucchini zoodles is a hearty high protein dinner. Swapping pasta to zucchini is a perfect way to get your pasta fix without sacrificing the calories. Not to mention this recipe is delicious. Serves 4.
INGREDIENTS
- 450g Chicken breast
- 150g Cherry tomatoes
- 3 Tablespoons pesto
- 1 Garlic clove
- 1/2 Red onion
- 2-3 Zucchinis
- Salt and pepper, to taste
- Chilli flakes (Optional)
METHOD
- Spiralise the zucchini. (Pre-spiralised zucchini can be purchased from some stores).
- Dice the chicken into 3-4cm pieces.
- In a medium sized bowl, combine the chicken, pesto, salt, and pepper. Toss together until the chicken is coated in the pesto. Set aside.
- Heat a pan over medium heat and lightly spray with cooking spray. Cook the garlic and red onion until brown.
- Cut the cherry tomatoes into halves and add to pan. Cook the skin is slightly blistered.
- Add the pesto chicken to the pan and cook until the chicken is cooked through.
- Add in the spiralised zucchini.
- Toss everything together and heat through for about 2-3 minutes.
- Serve with a sprinkle of chilli flakes. Enjoy!!
