With the colder months coming up this broccoli and cauliflower soup is a perfect winter warmer. It’s super tasty, full of nutrients and doesn’t break the bank. A great way to hide veggies from the fussiest of eaters. Recipe serves 8.
INGREDIENTS
- Whole Broccoli (stems and florets)
- Whole Cauliflower (stems and florets)
- 1 Tablespoon olive oil
- 2 Garlic cloves
- 1 medium onion chopped finely
- 4 cups of vegetable stock
- Goats Cheese (Optional)
- Salt and Pepper to taste
METHOD
- Heat olive oil over medium heat. Add in garlic and onion and cook until softened and lightly brown.
- Add broccoli and cauliflower to a pot, tossing garlic and onion through. Add in stock. Reduce heat and simmer for 20-25 minutes, stirring occasionally.
- Puree the soup until a smooth, creamy consistency is achieved.
- Add salt and pepper and a sprinkle of goats cheese when serving. Enjoy!!
