This recipe is a perfect high protein, weekend breakfast treat. A healthy take on regular pancakes that taste just as good, if not better. A definite crowd pleaser.
Ingredients
- 1 scoop of protein powder
- 2 egg whites & 1 whole egg
- Teaspoon of almond milk
- 1 tablespoon of oats
- Half a banana
- Handful of frozen blueberries to serve
- Sugar free maple syrup to serve
(This will make 1 big pancake or a two small)
Method – Step by step
- Add whisked eggs, protein powder, rolled oats, almond milk and banana to a Nutribullet (or similar)
- Once mixed well, add a teaspoon of oil/ or spray oil to heated pan and pour protein mixture in pan
- When small bubbles start to form, lift up pancake to see golden tone to cooking side then flip.
- Lightly cook other side and then serve. Note: Don’t cook for too long otherwise will the pancakes will form a rubbery consistency.
- Serve with blueberries and sugar free maple syrup. Enjoy!!
