This recipe is a perfect high protein, weekend breakfast treat. A healthy take on regular pancakes that taste just as good, if not better. A definite crowd pleaser.

Ingredients

  • 1 scoop of protein powder
  • 2 egg whites & 1 whole egg
  • Teaspoon of almond milk
  • 1 tablespoon of oats
  • Half a banana
  • Handful of frozen blueberries to serve
  • Sugar free maple syrup to serve
(This will make 1 big pancake or a two small)

Method – Step by step

  1. Add whisked eggs, protein powder, rolled oats, almond milk and banana to a Nutribullet (or similar)
  2. Once mixed well, add a teaspoon of oil/ or spray oil to heated pan and pour protein mixture in pan
  3. When small bubbles start to form, lift up pancake to see golden tone to cooking side then flip.
  4. Lightly cook other side and then serve. Note: Don’t cook for too long otherwise will the pancakes will form a rubbery consistency.
  5. Serve with blueberries and sugar free maple syrup. Enjoy!!
