Chicken Satay Vermicelli Salad
A fresh, flavour-packed, high-protein meal that’s light on calories but big on taste, making it a perfect option for a healthy and satisfying lunch or dinner.
Ingredients
- 500g chicken breast
- 150g vermicelli noodles
- 1 carrot
- 1 cucumber
- 1 capsicum
- ½ red onion
- Coriander (optional)
- 2 tbsp crushed peanuts
satay dressing
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp lime juice
- 1 tsp sesame oil
- 3–4 tbsp warm water
- ½ tsp minced garlic
Method
- Cook the chicken: Season the chicken breast with a little salt and pepper. Cook in a non-stick frying pan over medium heat until cooked through and golden on the outside. Set aside to rest, then slice or shred.
- Prepare the noodles: Cook the vermicelli noodles according to the packet instructions. Drain and rinse under cold water, then set aside.
- Make the satay dressing: Add the light peanut butter, soy sauce, sweet chilli sauce, lime juice, sesame oil, garlic and warm water to a small bowl. Whisk until smooth and creamy. Add a little extra water if needed to reach your desired consistency.
- Prepare the vegetables: Julienne or thinly slice the carrot, cucumber, capsicum and red onion. Roughly chop the coriander.
- Assemble the salad: Add the noodles, vegetables, coriander and chicken to a large bowl. Pour over the satay dressing and toss well to combine.
- Serve: Divide between 4 bowls and sprinkle each serve with the crushed peanuts. Serve with an extra squeeze of lime if desired.
Tip: For an even lower-calorie option, leave out the sesame oil and add a little extra lime juice or water to the dressing.
