Ingredients
- 1kg chicken breast, diced or left whole
- 1 onion, finely diced
- 2 tbsp butter chicken curry paste
- 1 × 400g can diced tomatoes
- 400g light Greek yoghurt
- Optional: 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh coriander to serve (optional)
Method
- Place the chicken, onion, curry paste, diced tomatoes, and garlic (if using) into the slow cooker.
- Cook on low for 6 hours (or high for 3–4 hours).
- Remove the chicken and shred it with two forks, or dice it if preferred.
- Stir the shredded chicken back into the sauce.
- Let the mixture cool for 5–10 minutes, then stir through the greek yoghurt. (Adding the yoghurt at the end helps prevent it from curdling.)
- Season to taste and serve.
