Ingredients

  • 1kg chicken breast, diced or left whole
  • 1 onion, finely diced
  • 2 tbsp butter chicken curry paste
  • 1 × 400g can diced tomatoes
  • 400g light Greek yoghurt
  • Optional: 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh coriander to serve (optional)

Method

  1. Place the chicken, onion, curry paste, diced tomatoes, and garlic (if using) into the slow cooker.
  2. Cook on low for 6 hours (or high for 3–4 hours).
  3. Remove the chicken and shred it with two forks, or dice it if preferred.
  4. Stir the shredded chicken back into the sauce.
  5. Let the mixture cool for 5–10 minutes, then stir through the greek yoghurt. (Adding the yoghurt at the end helps prevent it from curdling.)
  6. Season to taste and serve.
