Chicken Satay Vermicelli Salad

A fresh, flavour-packed, high-protein meal that’s light on calories but big on taste, making it a perfect option for a healthy and satisfying lunch or dinner.

Ingredients

  • 500g chicken breast
  • 150g vermicelli noodles
  • 1 carrot
  • 1 cucumber
  • 1 capsicum
  • ½ red onion
  • Coriander (optional)
  • 2 tbsp crushed peanuts

satay dressing

  • 3 tbsp  peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 3–4 tbsp warm water
  • ½ tsp minced garlic

Method

  1. Cook the chicken: Season the chicken breast with a little salt and pepper. Cook in a non-stick frying pan over medium heat until cooked through and golden on the outside. Set aside to rest, then slice or shred.
  2. Prepare the noodles: Cook the vermicelli noodles according to the packet instructions. Drain and rinse under cold water, then set aside.
  3. Make the satay dressing: Add the light peanut butter, soy sauce, sweet chilli sauce, lime juice, sesame oil, garlic and warm water to a small bowl. Whisk until smooth and creamy. Add a little extra water if needed to reach your desired consistency.
  4. Prepare the vegetables: Julienne or thinly slice the carrot, cucumber, capsicum and red onion. Roughly chop the coriander.
  5. Assemble the salad: Add the noodles, vegetables, coriander and chicken to a large bowl. Pour over the satay dressing and toss well to combine.
  6. Serve: Divide between 4 bowls and sprinkle each serve with the crushed peanuts. Serve with an extra squeeze of lime if desired.

Tip: For an even lower-calorie option, leave out the sesame oil and add a little extra lime juice or water to the dressing.
